This is an easy creamy nutritious soup that takes very little time and is quite filling. I made this for dinner but this can be made in advance the previous night and had for breakfast the next day too 🙂 I got inspiration for this soup from a video recipe by chef Vikhas Khanna in food food India channel. He had used flavored instant MTR oats sachets in his recipe. I substituted it with normal oats and added the seasoning myself.
- 1/2 cup oats
- 21/2 cups milk
- 1/4 cup finely chopped carrots
- 1/4 cup finely chopped bell peppers
- 1 onion finely chopped
- 3-4 garlic flakes
- 1 bay leaf
- 1 or 2 spring onions both the white and green part chopped finely
- 1/2 tsp chilli flakes
- 2-3 sprig fresh thyme (or use dried Italian herb mix)
- a pinch of ground nutmeg
- 1 tbsp olive oil/butter
- 1/4 tsp sugar
- salt to taste
- 1/2 cream (optional)
- water as necessary
In a deep pan add oil and bay leaf, chopped garlic and chilli flakes. Saute until the raw smell is gone.
Add the chopped onions and saute until soft and translucent. Then add the chopped veggies (ie) carrots and bell peppers (corn, broccoli, peas can also be added)
Add a pinch of salt and saute for a minute or more. Do not over cook them.
Then add the oats and stir well.
Add milk , 1/2 cup water, cream(optional), herbs(I added thyme and a pinch of nutmeg), sugar, salt and let it come to a boil in a low medium flame.
When the oats get completely cooked switch off the flame and serve hot with some cheese grated on top.
Adjust the consistency by adding/ reducing water as necessary.
