Gobi tikka masala

gobi tikka masalaWho doesn’t love a good spicy paneer or Gobi tikka!! It is usually one of the popular items in a restaurant menu.This is a semi dry sabji that goes well with rotis, kulchas or naan. Gobi/ cauliflower is marinated in yogurt and spices and grilled.Traditionally they are made in a tandoor, but I’ve grilled them here. The grilled/baked tikkas are then mixed in a thick onion-tomato masala to make a semi dry sabji/curry. You can substitute the cauliflower with paneer/Indian cottage cheese to make paneer tikka masala.


  • 1 cauliflower head


  • 2 cups yogurt
  • salt to taste
  • 1 tbsp dried fenugreek leaves
  • 1 tbsp chopped coriander leaves
  • 1 tbsp oil
  • 1/4 tsp turmeric powder
  • 1 tsp chilli powder
  • 1 tsp garam masala
  • 1 tsp chaat masala
  • 1/2 tsp amchur powder
  • 1/2 tbsp ginger garlic paste
  • 1/2 tsp ajwain/carom seeds
  • 11/2 tbsp besan/gram flour
  • salt to taste

For the masala:

  • 1 onion chopped finely
  • 2-3 tomatoes pureed
  • a small piece of cinnamon
  • 1/4 tsp fennel seeds
  • 1/2 tsp cumin seeds
  • 1-2 cloves
  • 1 small elachi/cardamom
  • 1/4 tsp turmeric powder
  • 1/2 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/4 tsp chilli powder
  • 1 1/2 tbsp oil
  • salt to taste


Boil water with salt, add the cauliflower florets in it and boil for 2-3 mins. Do not over cook them as they will become mushy while baking.

IMG_1853Mix all the ingredients for the marinade.

IMG_1854Add the florets in the marinade and mix well until they are coated well. Be careful not to break the florets.

IMG_1856Let them rest for a couple of hours in a refrigerator.

After two hours, place the florets in an aluminum foil lined baking tray and grill them in a preheated oven for 20 mins or until they are browned.

IMG_1862Mean while, add oil in a pan and add the cumin seeds, fennel seeds, cardamom, cloves and cinnamon and saute for a minute.

Add the finely chopped onions and saute until they become translucent and soft. Add the tomato puree, turmeric powder, coriander powder, cumin powder,chilli powder, salt and saute well until you can see the oil come out of the masala.

IMG_1861Check seasoning and add salt if required.

Now add the baked cauliflower florets in the masala and mix until the masala is coated in the florets.

Serve hot with rotis/kulchas/naan.
