I am actually super excited right now!! I cant believe I made my own soft fluffy pav bread. I was actually skeptical while baking them because I’m new to recipes using yeast. My previous attempts of making whole wheat bread loaf left me disappointed and since then I gave up on yeast recipes! But these soft dinner has restored my faith in my baking skills 🙂 The best way to eat these is with delicious tangy Pav bhaji sabji, a curry using mashed vegetables like potato, carrots, beans, capsicum mixed with aromatic spices and lot of butter!! Or if you dont want to go to all the trouble of making the curry, eat it with your favorite jam or dip it in your soup 🙂
As you can see they are very soft inside 🙂
Yields 8 pavs
- 2 cups all purpose flour
- 1 tsp sugar
- 1 tsp active dry yeast
- 1 tsp salt
- 2 tbsp oil
- 1/2 cup milk
- 1/2 cup water
Take 2 tbsp of the milk and heat it until it is luke warm. Add sugar to it and add the yeast.
Mix and let it rest for 10 mins to activate the yeast. You will see that it becomes frothy. That’s when you know your yeast is activated.
Take a deep bowl and add the flour, salt, oil, yeast mixture, remaining milk (again luke warm milk) and start kneeding the dough adding water as necessary. You will not need more than the mentioned 1/2 cup water. Infact I had 2 tbsp water remaining.
The dough will be sticky initially, but will get better as you keep kneeding. Keep kneeding the dough for about 10 mins. This is important to develop the gluten. The dough should become smooth when you are done with it and it should spring back when poked.
Apply oil to the outer surface of the dough. Cover it with a cling wrap or towel and let it rest for 1.5 to 2 hrs depending on the temperature there,until the dough doubles in size. (Since it is very cold here I let the dough rest in the oven with the oven lights on)
After 2 hours punch the dough and kneed for a minute or two.
Make equal sized balls out of the dough and keep them in an oiled tray/pan. Make sure that you leave about 11/2 inch space between each balls.
Let it rest for 1/2 hour.
The dough would have become bigger.
Apply egg wash or milk to the dough on top.
Bake them in a preheated oven at 350 F for about 18-23 minutes until the tops are browned.
Cool them for few minutes and serve it with delicious bhaji 🙂
